Spaghetti with Kumquat and caramelized tomatoes by Varvara

Ingredients

1 kg spaghetti
2 onions
2 fresh onions
10 kumquat
2 tablespoons soy sauce
1 tablespoon brown sugar
1 cup red wine sweet
10 cherry tomatoes
2 tablespoons olive oil
Salt
Pepper
Safran

Method

Prepare the sauce: In a pan pour the oil until it hot and add the chopped onions. Then let them wither and put the sugar to caramelize. Then take half kumquat, take the juice and mince them. Then put soy sauce, salt and pepper. Boil to lessen their liquids. In another pan put a little oil to burn, then add the tomatoes to wither and put wine and safran, as a little salt.

Over in cooked al dente pasta put the sauce with kumquat. Around the dish put the tomatoes and garnish with fresh kumquat.
