1 chicken, cut into small portions
12 fresh kumquats
½ cup olive oil
1 cinnamon wood
1 teaspoon fibers safran (crocus)
1 tbsp fresh grated ginger
One glass of wine sweet Samian wine
Juice of 1 orange
Salt and freshly ground pepper
1 large chopped onion
1 finely chopped garlic clove
Put the whole kumquat in boiling water and let them get 1-2 boil. Drain well and cut into 2 or 4, depending on how big it is. In wide pot, sauté the chicken in olive oil along with cinnamon, safran and ginger until it golden brown on all sides. Add the wine and orange juice. Once evaporated, add salt and pepper. Lower the heat, add the onion, garlic and serve hot with white rice Basmati or Jasmine.
•You can find fresh kumquat at a good deli that have vegetables.
• This food is delicious with goat or rooster.
•Optionally we can add two chopped ripe tomatoes.
