Liqueur Kumquat

1 kg kumquat

700-100 g sugar

1 bottle Brandy (750ml)

Kumquat matures from January to March. The fruits that we will use care to be tight with bright orange color. After, you pick the fruit, wash them and carve them with a knife in two to three sides by deep gashes hundredth. With the help of a packing needle and nylon thread we make a ‘rosary’, which has kumquat instead of beads. Put into the Brandy and rosary with kumquat. Close the jar and take care not to close it tightly. Let the jar for three weeks. After that time, pour in a saucepan so much sugar depending on how sweet we want to be our liquor, 2 glasses of water and boil for 5 minutes until the sugar is completely dissolved. Let the syrup cool down thoroughly and pour into the jar with brandy and kumquat. Close the jar as before and leave to stand for one week. Once passed this period, our liqueur is ready and kumquat that has been used can be eaten, but wisely.
