750 ml of good quality tsipouro without anise
1 kg kumquat
1 kg of sugar
2 cups of water
Wash and dry our kumquat, which must be tight and have orange color.
Carve them with a knife into two or three points and put them in a bowl or a large jar with tsipouro. Leave them in a shady place for four weeks.
After 4 weeks, boil the sugar and the water in syrup and after cooling add it in the jar.
We close again and leave for another week.
After these days, remove the kumquat, filter the liqueur 2 times and fill into the bottles.
*Last year I had made it by adding sugar to the bottle from the start without using water and stirring occasionally to dissolve the sugar.
Having spent the four weeks I tried to see if it needed another sugar. It didn’t but I if it did I would make a little syrup and I would add it.
