Liqueur Kumquat with Raki

½ pound of kumquat
3 cups of sugar
3 cups of raki
2 cups of water
Optionally, 4 drops of yellow and 1 drop of red food coloring


Wash well the kumquat and let them drain.
Pierce with a toothpick each kumquat at 2-3 points and put them in a vase with a cup of sugar and 2 cups of raki. Stir to melt the sugar by moving back and forth the jar and leave it in a dark place (e.g. in a cupboard, at the kitchen, in a warehouse) for a month. Shake occasionally to dissolve the sugar. Boil 2 cups of sugar with 2 cups of water for 10 minutes and let them cool completely.
Pour the syrup into the jar. Add the third cup of raki and reclose for 3-4 days.
Fold a piece of tulle in half and put between a piece of cotton. Put this makeshift filter in colander and drain our liqueur. It must be clear. Store it in bottles and enjoy it!
1)Because I wanted a little more intense color, you can add 4 drops of yellow and one of red after the filtration. What do you think?
2) Kumquat has a very delicate flavor, so I don’t put other aromatic liqueur. If you like you can put 5-6 cloves pins or 1 cinnamon stick either in the vase put a fruit or when you boil the syrup.
3) Liqueurs with raki are digestive and you can drink them after every meal. Of course, they always match with all kinds of chocolate! For those who celebrate today, I will wish them happy name day with my aromatic liqueur!
